This member of the Chanterelle family grows throughout the winter and is a lesser known diamond in the rough. The easiest of all the wild mushrooms to rehydrate, the dried form is perfect to use in soups or to go with game dishes, buttery sauces, or with eggs. Less meaty than the golden chanterelle, with a texture that is soft and moist.
